It's a Great Day to be Alive !

The sun is shining and we have each other !!  Come on - let's move forward.  Look to the future and make it great!  You still have a choice -- you can be happy or choose to be miserable.  I choose to be happy in whatever situation I am in.  My situation is bleak right now but I see light at the end of the tunnel. 

I am ready to market this book and my other coming books and make a living writing, something I love to do - write.  The first of many books, "The Ultimate Thanksgiving Planning Guide and Recipe Book", has everything in it that you would need to make your entire day a great, never ending feast from breakfast casseroles all the way through dessert - pies, pumpkin dessert and cheesecake.

Spinach Salad with Dried Cranberries, Walnuts and Pomegranate Vinaigrette 

1/2 cup pomegranate juice 

2 tablespoons white wine vinegar

2 tablespoons olive oil 
2 teaspoons Dijon mustard
Salt and ground black pepper 
6 cups baby spinach leaves 
1/3 cup dried cranberries 
1/3 cup walnut pieces 


In a small container with a lid, combine the pomegranate juice, vinegar, oil, and Dijon mustard. Seal and shake to combine. Season with salt and pepper to taste. 


Place spinach on a serving platter and top with dried cranberries and walnuts. Pour vinaigrette over spinach and serve.  Yield:  4 servings
