"Don't cry because it's over, smile because it happened." ~ Dr. Seuss

Today would have been Dr. Seuss's 107th birthday.  I have always enjoyed reading and watching Dr. Seuss stories.  He can still take me back to when things were much simpler. I loved reading The Cat in the Hat and Green Eggs and Ham and my all time favorite How the Grinch Stole Christmas.  He had such a way of writing and a great imagination to match. 

Dr. Seuss also had it right when he said:  ' Don't cry because it's over, smile because it happened'.  Too often we are sad when something we really enjoy is over or even when someone is gone.  We are focusing on the wrong thing.  We should be glad we could have been a part of whatever it is and smile.  Remember the positive times and the fun times and smile.  Life is too short to have regrets.  Today, stop thinking about the negative things and re-focus on the positive things in your life. 

So today in honor of Dr. Seuss's birthday, we will have an egg recipe.  They are not green but if you insist on green, use food coloring ~ can't imagine they would look appetizing, but whatever makes your day : )

Scrambled Eggs with Smoked Salmon

Ingredients
8 egg whites or 1 cup egg substitute
3 ounces smoked salmon, diced
1/3 cup skim milk
1 cup fresh spinach, roughly chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh chives, chopped
fresh ground pepper
2 slices whole wheat bread, toasted


Directions;
1. Beat the eggs, milk and seasonings in a small bowl.
2. Spray a skillet with non-stick spray (or use a non-stick skillet) and heat over medium heat.
3. When hot, add the egg mixture.
4. Cook eggs, stirring occasionally, for about 2-3 minutes (until slightly set).
5. Stir in the salmon and spinach until the salmon is heated through and the spinach has wilted.
6. Serve over toasted bread, sprinkled with additional fresh dill and chives.
